Okonomiyaki

Literally translating to “grilled as you like it,” Japanese food okonomiyaki is a savory pancake mixed with cabbage, egg, and dashi broth, topped with a variety of meat, seafood, and condiments all selected by the maker “as they like it.” The batter is cooked on a flat iron griddle (teppan) and typically garnished with a geometric design of mayonnaise and sprinkling of umami-rich aonori (seaweed flakes) and shaved bonito flakes on top. Okonomiyaki is an iconic Japanese street food that is hearty, comforting, and beloved by Japanese.

 

Yakisoba

Yakisoba is a Japanese stir-fried noodle dish that is a staple at festivals, with the unmistakable sizzle of noodles being an irresistible attraction. Seasoned with a sweet and savory sauce and mixed with vegetables and small pieces of meat, yakisoba is topped off with red-pickled ginger (beni-shoga), which adds an additional kick of flavor.
